Puran Poli is a popular Maharashtrian recipe made during Ganesh Chaturthi or Diwali or any other festive occasion. During Ganesh Chaturthi festival, Modak, Puran Poli and Nariyal ladoo is usually prepared in Maharashtra.

Puran Poli is just like a Paratha, but with a sweet filling. The dough for it is made with whole wheat flour, salt, turmeric powder, water, and ghee. The stuffing inside is made with cooked chana dal, jaggery, and ghee. This mixture is flavored with nutmeg powder, fennel powder, and cardamom powder, which enhances the taste of these Polis even more and also lends it a beautiful aroma.

Remember before start making Puran Poli that the consistency of Puran should be right. So it doesn’t come out while rolling.

Ingredients:

·       1 cup chana dal

·       ¼ tsp turmeric

·       ¼ tsp salt

·       3 cups of water

·       1 tsp oil

·       1 cup jaggery / gud

·       ¼ tsp jaiphal powder/nutmeg powder

·       ¼ tsp cardamom powder / elachi powder

FOR DOUGH:

·       2 cups wheat flour/atta

·       ½ cup maida / plain flour

·       ¼ tsp  turmeric

·       ¼ tsp salt

·       water to knead

·       ¼ cup  wheat flour/atta

·       oil/ghee for roasting

 

How to make Bali/ Puran poli at home

 

Step 1:

Wash and boil chana dal. Drain and coarsely grind it. In a pan add the dal, grated jaggery, saffron, cardamom powder, and nutmeg powder and mix well.

Step 2

Cook, stirring all the time till dry. It should resemble a softball. Remove and cool. Divide the stuffing into sixteen to twenty equal portions and roll into balls.

Step 3

Mix maida and salt. Add three tablespoons of ghee and sufficient water to make a soft dough. Cover with a damp cloth and keep aside for one hour.

Step 4

Divide dough into sixteen to twenty equal portions and roll into balls. Flatten each ball in your palm, stuff with one portion of Puran (stuffing), cover and seal the edges.

Step 5

Dust it with flour and roll out into four to five inches diameter disk of medium thickness. Heat a Tawa and cook Puran Poli until done on both sides. Remove. Serve hot with a generous helping of pure ghee on it and cold milk.

Note:, Puran Poli / Boli stays good for a week or more when refrigerated.
