Christmas Recipe Special Pineapple pudding/ Eggless desert.

The the refreshingly sweet flavor of the crushed pineapples perfectly pairs with the homemade custard creating an addictive and uniquely desirable dish. Like in banana pudding, the pineapples provide a similar consistency, and the sugary taste is the best way to finish a meal. The best part of this is the pineapple pudding lends itself to a beautiful presentation and gourmet flavor, it's still incredibly easy to make.

Ingredients for pineapple pudding:

Pineapple - 2 cups, chopped finely.

Milk - 2 cups.

Sugar - 5 tbsp + 4 tbsp( can use condensed milk instead).

Chinagrass / agar agar - 6 to 7 gms.

Yellow food color - 2 drops.

Marie biscuit: 1 packet.

Almond sliced - for garnishing.

Can use chopped cherries and dry fruits also.

Steps for making Pineapple pudding at home:

·       Take 1 cup of stewed pineapple or more if you like and keep it aside. Mix Milk with agar 1 tbsp and put on the heat for 1-2 mins.

·       Whip the cream with half a cup of powdered sugar and the other half of the sugar towards the end. I did not whip into stiff peaks, the creamy fluffy stage is fine. Put the pineapple and the vanilla essence into it and mix well.

·       Spread half of the creamy pineapple mix on the biscuit(Marie) in a glass or container.

·       Put another layer of dry fruits dipped in milk and again top it with the cream mix. You can decorate with chocolate shavings or chocolate sprinkles as per your choice. Chill the pudding for 3-4 hours.

·       Serve the pudding with some sprinkle of your choice at the top.
